Bacon Brownies

 

 

For the Brownies

  • 1 stick melted butter
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • ¾ all purpose flower
  • ½ cup un-sweented cocoa powder
  • ¼ tsp salt
  • ½ tsp baking soda
  • 1 cup semi sweet chocolate chips

 

Instructions:

Preheat oven to 350

Spray 8×8 pan

Cream sugar, butter, vanilla extract until fluffy

In a second bowl, sift all dry ingredients together

Into the butter mixture, beat in the eggs until combined

Add flour mixture gradually

Mix in chocolate chips

Pour batter into pan

Bake for 20-25 minutes

 

*Bakers Tip: Toss the chocolate chips in a tbsp. of flour before adding to prevent them from sinking while baking.

 

For the bacon crumble:

  • 6 strips of thick cut bacon, cooked until crispy (reserve cooled bacon grease for the icing).
  • 1 cup chopped pecans
  • 1 tbsp melted butter
  • ¼ cup sugar

 

Instructions:

Dice bacon and toss with remaining ingredients. Pour onto cookie sheet covered with aluminum foil.  Bake at 350 for 10 minutes. Allow to cool to room temperature.

 

For the icing:

  • ¾ cup softened unsalted butter
  • 2 ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Bacon grease reserved previous step

 

Instructions:

With a hand mixer add butter to a large bowl, begin mixing at medium speed until smooth and fluffy. On a lower speed at the rest of the ingridants, gradually. Increase the speed to high and beat until fluffy and lighter in color.
