“Seared BBQ Salmon with Island Fried Cabbage”
– Skinless Salmon Steak
– 1 tbs Low Sodium BBQ rub
– Fresh Thyme
– 2 tbs extra virgin olive oil
Use 1/2 tbs to rub salmon on both side, then massage BBQ seasoning on both sides of salmon. In a large cast iron skillet heat olive oil, then fresh thyme. Add salmon and let cook 3-5 minutes on each side (depending on thickness). Remove from skillet, let rest for 2 minutes and serve!
– 1 small cabbage head (shredded)
– 1 cup match stick carrots
– 4 stems fresh thyme
– 2 tbs minced garlic
– 1/2 Cup of The Holy Trinity (Onions, bell peppers, and celery)
– 3 tbs Extra Virgin Olive Oil
– 2 tbs water
– salt & pepper (to taste)
In a large wok or skillet, heat Olive oil on medium heat. Then add fresh thyme, then garlic, then Trinity and let cook for 1 minute. Then add shredded cabbage, then water, and lightly season with salt & pepper. Reduce heat to low-medium & let cook for approximately 10 minutes (stirring every 2 minutes). Then add match stick carrots, blend well. Let cook for additional 5-7 minutes and serve.
