Glamorous Greens Detox
1 Tbsp fat (coconut, ghee, duck fat)
1-2 Tbsp Favorite seasonings (I mix salt, paprika, curry, turmeric, thyme, oregano)
2 medium sweet or white potatoes, cut into 1/2-inch pieces
1 medium onion, chopped into 1/2-inch pieces
1 garlic clove minced
Chop the following vegetables into bite-size pieces:
1 bunch (10 ounces) spinach,
1 bunch (10 ounces) kale
1 bunch (10 ounces) bok choy
1 bunch (10 ounces) napa cabbage
In a very large skillet over medium heat, add the fat and seasonings. Use what you have! Add the potatoes, onion, and garlic and sautè for 10 minutes. Add the remaining vegetables and sautè until the greens wilt and become darker green. (Don’t cook to death!) Serve warm.
Save leftovers for a wonderful frittata for breakfast.
