Celebrate National Pumpkin Day with WFLA Lila Gross’s favorite recipies

TAMPA, Fla. (WFLA) — It’s National Pumpkin Day, and you know that means News Channel 8’s Lila Gross has the best pumpkin recipes for you to try.

Pumpkin Spice Latte

It wouldn’t be fall without the iconic pumpkin spice latte. Here’s how you can have it at home every morning.

The Food Network said to microwave until the milk is hot, which should be about 1 to 2 minutes. Whisk vigorously until the milk mixture is foamy, likely for about 30 seconds. Pour the espresso or coffee into a large mug and add the foamed milk. Top with whipped cream and a sprinkle of pumpkin pie spice.


Pumpkin Pie

You can add a twist to this classic dish by adding a dash of cinnamon and some vanilla ice cream.

AllRecipes.com said to preheat the oven to 425 degrees. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into the crust. Bake for 15 minutes. Reduce the oven temperature to 350 degrees and continue baking for 35 to 40 minutes. Don’t forget to let it cool.

Pumpkin Lasagna

Here’s one you don’t see every day. Spaghetti squash had its time in the limelight as a healthy food, and now it’s time pumpkin does too. Are you daring enough to try it?

Taste of Home said, in a small skillet, saute the mushrooms, onion and 1/4 teaspoon salt in oil until tender; set aside. In a small bowl, combine the pumpkin, cream, sage, pepper and remaining salt. Then, spread a 1/2 cup of pumpkin sauce in an 11×7-inch baking dish coated with cooking spray. Top with three noodles (noodles will overlap slightly). Spread 1/2 cup pumpkin sauce to edges of noodles. Top with half of mushroom mixture, 1/2 cup ricotta, 1/2 cup mozzarella and 1/4 cup Parmesan cheese. Repeat layers. Top with remaining noodles and sauce. Lastly, cover and bake at 375° for 45 minutes. Uncover; sprinkle with remaining Parmesan cheese. Bake 10-15 minutes longer or until the cheese is melted. Let stand for 10 minutes before cutting.
